Breakfast and brunch food are my absolute favorites. I have made frittatas for my friends and family numerous times and it is always a hit! This can be customized by switching up the veggies, adding hash browns to the bottom of the pan before baking, or adding more or less eggs depending how many people will be eating!
Ingredients

1/4 C diced onion

1 bell pepper, diced

½ a tomato, diced

1 cup of spinach

1 tablespoon olive oil

8 eggs

¼ cup milk of choice
-
salt & pepper

Avocado for topping
Directions

Preheat the oven to 350.

Add onion and bell pepper to a skillet with a little olive oil. Heat for a couple minutes over medium heat until they soften and brown slightly. Add the spinach and let cook for a minute until wilted. Remove from pan and add to a bowl.

Crack the eggs into a large bowl, add milk, salt and pepper, and whisk together. Add the veggies to the egg mixture

Lightly grease a baking/casserole dish or a cast iron skillet. Pour the eggs into the dish and place in the oven. Let bake for 30-40 minutes until the eggs are cooked through. Serve warm with avocado, potatoes, toast, or anything else desired
