Whether you cooked together with Dom, enjoyed a fully prepared meal from Full Circle Food, or are just looking for a delicious new dinner, here’s Dom’s Roasted Blush Sauce with Penne Pasta and Chicken!

Ingredients

1-2 bone in chicken breasts with skin (OR 8oz baby bella mushrooms)

1 28 oz can whole peeled plum tomatoes

1 medium to large yellow onion (roughly chopped)

4 cloves garlic (roughly chopped)

1 tbsp. oregano

1/2 cup vodka (optional)

1/2 cup grated parmesan cheese

1/2 cup light cream

1 lb. box of penne pasta

3 tbsps of olive oil

Kosher salt

Pepper

Directions 

ROASTED TOMATOES for Vodka Sauce

Before starting, open can of tomatoes and empty tomatoes and liquid into a large bowl. Crush each tomato in your hand once. This can be messy! Set aside.

1. Preheat oven to 375 degree (can be cooked with the chicken).

2. Use an oven-safe sauce pan with lid (minimum 3 quarts size).

3. On top of stove, add olive oil, onion, 1/4 tsp. salt, 1/4 tsp. pepper, 1 Tbsp. oregano and cook on medium heat until onion is translucent (about 10-12 minutes)

4. Add garlic. Cook for one minute.

5. Carefully add vodka. Cook for 3-4 minutes on medium heat.

6. Add tomatoes and juice to pan. Bring to a light boil on the stove. Put lid on.

7. Remove from stovetop and bake in the oven for 1 1/2 hours.

8. Remove and let cool with the cover off for 15 minutes.

It won’t look pretty at this point, but Dom says to trust the process!

CHICKEN

1. Cover a 1/4 sheet pan with aluminum foil.

2. Rub the chicken breast with 1 tsp. olive oil, 1/8 tsp. salt, 1/8 tsp. of pepper.

3. Roast for 50-60 minutes.

4. Remove and let cool for 20-30 minutes.

5. Pull chicken off the bone in bite size pieces. Set aside.

OR 

MUSHROOMS

1. Slice mushrooms.

2. Sauté in 1 tsp. olive oil, 1/8 tsp. salt, 1/8 tsp. of pepper for 5 minutes.

3. Set aside.

FINISHING THE SAUCE

  1. Put the roasted tomatoes in blender or food processor

  2. Puree for 30 seconds. (This is where the magic happens!)

  3. Return to same pan on top of stove.

  4. Over medium to low heat add 1/2 cup parmesan cheese and 1/2 cup light cream.

  5. Stir and cook for 8-10 minutes on medium to low heat.  If sauce is too thick add 1/4 cup pasta water

PUTTING IT ALL TOGETHER

  1. Cook the pasta following the directions not the box.

  2. Drain the pasta. (saving a cup of water for sauce if needed)

  3. Add pasta to the sauce.

  4. Add chicken.

  5. Stir.

  6. Let sit off heat for 3 minutes. Serve
